Listen, these are the chicken tacos that started getting questions before the plates were even cleared. I made a big batch of chicken thighs in the Bahamas, seasoned them with taco spices, Louisiana hot sauce and a squeeze of lime, then gave them a serious sear until the edges got golden and crispy. The result? Tender chicken with layers of smoky, savory, slightly spicy flavor and those little caramelized bits that make you mysteriously keep reaching back into the pan.

And apparently, I wasn’t the only one impressed because people immediately started asking, “What did you put in these?” That’s when I knew the recipe had to be shared. These are perfect for taco night, feeding a crowd, or any time you want to put out a platter of food that has everybody hovering around the kitchen asking when they can make a plate. Grab your tortillas and get ready, because these chicken tacos have a habit of disappearing fast.

Addictively Delicious Chicken Tacos

These aren’t your average chicken tacos. Tender, deeply seasoned chicken gets a hit of Louisiana hot sauce and lime before hitting a screaming-hot pan for crispy edges. One bite explains everything.

Equipment

  • Large mixing bowl
  • Small bowl
  • Measuring spoons and cups
  • Tongs
  • Large skillet, griddle or grill
  • Cutting board
  • Sharp knife
  • Meat thermometer

Ingredients

Chicken

  • 6½ pounds boneless skinless chicken thighs, trimmed as needed

Seasoning

  • 2 packets Old El Paso Original Taco Seasoning
  • 2½ tablespoons chili powder
  • 2 tablespoons ground cumin
  • 1½ tablespoons smoked paprika
  • 1 tablespoon paprika
  • 1½ tablespoons garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons dried oregano
  • 1½ teaspoons black pepper
  • 1½ teaspoons chipotle chili powder
  • ¾ teaspoon cayenne pepper
  • 1 teaspoon Slap Ya Mama seasoning
  • No additional salt

Wet Marinade

  • ¼ cup Louisiana Hot Sauce
  • 3 tablespoons olive oil
  • 1 lime juiced

Instructions

  • Build That Flavor: Add the chicken thighs to a large mixing bowl. In a separate bowl, combine the Old El Paso taco seasoning, chili powder, cumin, smoked paprika, paprika, garlic powder, onion powder, oregano, black pepper, chipotle chili powder, cayenne pepper and Slap Ya Mama. Give it a good stir so every spice is evenly distributed.
  • Bring the Heat: Pour the Louisiana Hot Sauce, olive oil and fresh lime juice over the chicken. Sprinkle the seasoning mixture evenly over the thighs, then use clean hands or tongs to massage everything into the chicken until every piece is beautifully coated. We want flavor in every bite, friend!
  • Let It Marinate: Cover the bowl and refrigerate for at least 2 hours. If you have the time, letting the chicken marinate from 12-15 hours gives those smoky, spicy flavors even more time to settle in and get acquainted.
  • Get That Pan HOT: When you’re ready to cook, heat a large skillet, griddle or grill over medium-high to high heat. You want the cooking surface hot enough that the chicken sizzles the moment it hits the pan. This is where our beautiful caramelized edges begin.
  • Sear Like You Mean It: Working in batches, place the chicken in the hot skillet without overcrowding the pan. Cook for about 5 to 7 minutes per side, depending on thickness, until deeply browned and the chicken reaches an internal temperature of 165°F. Give each piece enough room to develop those gorgeous, flavorful browned edges. Crowding the pan will make the chicken steam instead of sear, and chile, we did not come this far to steam our taco meat.
  • Rest Before You Chop: Transfer the cooked chicken to a cutting board and let it rest for about 5 minutes. This gives the juices a moment to settle back into the meat instead of running all over your cutting board.
  • Chop It Up: Cut the chicken into bite-sized taco pieces. Don’t worry about making every piece perfectly uniform. Those little irregular pieces and crispy edges are part of the magic.
  • Crisp It Up Again: Return the chopped chicken to the hot skillet in batches and cook for 2 to 4 minutes, stirring occasionally, until some of the edges become golden brown and crispy. Trust me, friend. This second sear is where good taco chicken starts acting brand new.
  • Finish With Fresh Lime: Give the finished chicken another little squeeze of fresh lime juice before serving. That bright acidity cuts through the smoky spices and rich chicken and makes all those flavors pop.
  • Build Your Tacos: Pile the hot, crispy chicken into warm tortillas and finish with your favorite taco toppings. Fresh cilantro, diced onion, pico de gallo, salsa, avocado or another squeeze of lime would all be right at home here. You did your part. Now let the toppings have their moment!

Notes

  • For the best flavor and texture, don’t skip the second sear after chopping the chicken. Those crispy, caramelized edges are a big part of what makes this taco chicken special.
  • The chicken can be marinated overnight, making this a great recipe to prep ahead for taco night.
  • Store leftover cooked chicken in an airtight container in the refrigerator for up to 4 days.
  • Reheat leftovers in a skillet over medium-high heat for the best texture. A quick skillet reheat helps bring those crispy edges back to life.
  • Serve with warm corn or flour tortillas, fresh pico de gallo, cilantro, diced onion, avocado, salsa and lime.
