A vibrant, plant-based green bowl topped with steamed veggies, whole grains, and a creamy herb-packed green goddess dressing made completely from scratch.

Ingredients

The Bowl

  • 1, cup cooked brown rice, warm or room temperature
  • 1, cup broccoli florets, lightly steamed
  • ½, cup shelled edamame, steamed and unsalted
  • ½, medium avocado, sliced
  • ½, cup cucumber, thinly sliced
  • ¼, cup radishes, thinly sliced
  • 1, cup mixed leafy greens, butter lettuce or romaine work well
  • 1, tablespoon everything seasoning, optional and to taste

Green Goddess Dressing

  • 1, cup fresh spinach, packed
  • ½, cup fresh herbs, parsley and cilantro mix
  • ½, medium ripe avocado
  • 1, small garlic clove, peeled
  • 2, tablespoons fresh lemon juice
  • ¼, cup cold water, more as needed for blending
  • ½, teaspoon sea salt, adjust to taste

Optional Add-Ins Based on Conviction

  • Tahini for extra creaminess
  • Dijon mustard for depth
  • Nutritional yeast for a savory note

Instructions

  • Cook the Base: Prepare brown rice according to package instructions and set aside. Steam broccoli and edamame just until tender and bright green. You want life left in them.
  • Prep the Fresh Veg: Slice cucumber, radishes, and avocado. Wash and dry leafy greens thoroughly.
  • Blend the Dressing to Silky Perfection: Add spinach, herbs, avocado, garlic, lemon juice, salt, and water to a high-speed blender. Blend until smooth, vibrant, and pourable. Adjust thickness with more water if needed.
  • Build the Bowl with Intention: Add rice to the base of your bowl. Arrange broccoli, edamame, greens, cucumber, radishes, and avocado in sections so every bite gets variety.
  • Finish with the Sauce Moment: Drizzle the green goddess dressing generously over the bowl or serve it in the center for dipping and pouring as you go.
  • Pause and Enjoy: Take a breath before the first bite. This bowl is doing what it came to do.

Notes

  • If edamame is not part of your fast, substitute chickpeas or lentils if allowed, or simply add more veggies.
  • For an oil-free version, this dressing is already perfect as-is.
  • If garlic feels too strong, roast it lightly first for a softer flavor.
  • This dressing stores well in the fridge for up to 3 days. Stir before using.
