Build the Flavor-Packed Milk Bath: Add the whole milk, water, salted butter, brown sugar, Tony’s, garlic powder, onion powder, smoked paprika, black pepper, smashed garlic and bay leaf to a large stockpot. Heat over medium heat until the butter melts and the mixture reaches a gentle simmer. Keep it at a soft simmer rather than a rolling boil to prevent the milk from scorching or boiling over.
Simmer the Corn: Add the corn to the milk bath, working in batches if needed. Simmer for 6 to 8 minutes, turning occasionally, until the corn is tender but still has a little bite. We’re roasting it next, so don’t cook it into retirement.
Reserve the Flavor: Remove the corn with tongs and let it drain thoroughly. Reserve 2 tablespoons of the milk bath for the garlic butter before discarding the remaining liquid.
Make the Garlic Butter: Melt the salted butter in a saucepan over medium-low heat. Add the minced fresh garlic and cook for 2 to 3 minutes, stirring frequently, until fragrant and softened. Keep the garlic from browning so it stays sweet and flavorful.
Season the Butter: Add the Tony’s, smoked paprika, garlic powder, onion powder, black pepper, cayenne and brown sugar. Stir until well combined, then add the reserved milk bath. Let the butter gently simmer for 2 to 3 minutes, allowing all those smoky, savory and sweet flavors to mingle.
Brighten It Up: Remove the garlic butter from the heat and stir in the freshly squeezed lemon juice. Taste the butter before coating the corn. It should be buttery, garlicky, smoky, slightly sweet, Creole-forward and pleasantly spicy. No additional salt is needed.
Preheat Like a Pro: Preheat the oven to 425°F. If using a convection setting, start checking the corn a few minutes early since circulating heat can brown the butter and sugar more quickly.
Butter Up the Corn: Arrange the drained corn in a single layer on sheet pans. Brush generously with the Creole garlic butter, making sure the fresh garlic and spices are distributed across every ear.
Roast to Golden Perfection: Roast for 10 minutes. Remove the pans, turn the corn and brush with more garlic butter. Return to the oven for another 5 to 8 minutes, until the corn is glossy and develops beautifully caramelized edges.
Give It Some Char: Switch the oven to broil and broil the corn for 1 to 2 minutes, watching closely. You’re looking for those gorgeous browned and lightly charred spots. Don’t walk away here because the brown sugar can caramelize quickly.
Finish With Freshness: While the corn is hot, sprinkle with Parmesan if using and garnish with fresh cilantro or parsley. Cilantro is especially delicious here if you love its bright, fresh flavor, but parsley makes a beautiful, milder finish too.
Serve It Hot: Serve immediately with any remaining garlic butter for drizzling and lemon wedges on the side. After all that work, this corn deserves its grand entrance.
