  • 3/4 tsp smoked paprika
  • 3/4 tsp cumin
  • 3/4 tsp garlic powder
  • 3/4 tsp onion powder
  • 1/3 tsp dried oregano
  • 3/4 tsp cayenne pepper
  • 1 to 1 1/2 tsp crushed red pepper flakes
  • 1/4 to 1/2 tsp Cajun seasoning, adjust to taste (Slap Ya Mama recommended)
  • 1 1/2 Tbsp tomato paste
  • 1/3 cup water
  • 1/3 cup fat-free refried beans
  • 1, chipotle pepper in adobo finely minced, or 1 1/2 tsp chipotle paste
  • 1 1/2 tsp freshly squeezed lime juice
  • 3/4 tsp kosher salt
  • 1/3 tsp black pepper

  • 3 Tbsp cream cheese, softened

Layering

  • 3, Ole Xtreme Zero Carb Tortillas
  • 1 1/2 to 1 3/4 cups BetterGoods Mac & Cheese Blend shredded cheese (3-cheese blend)

  • Toast your spices: Add all spices and Cajun seasoning, stirring for about 1 minute until your kitchen smells like you know exactly what you’re doing
  • Deepen the flavor: Stir in tomato paste and let it cook until it darkens slightly and looks rich and concentrated
  • Create the base: Add water and refried beans, stir until thick and creamy, letting it simmer if needed until it tightens up
  • Add heat and brightness: Mix in chipotle and lime juice, taste and adjust salt so the flavor pops before baking
  • Make it creamy: Turn heat to low and stir in cream cheese until melted and smooth, giving you that rich, non-watery texture
  • Let it settle: Remove from heat and let sit for a few minutes so the mixture thickens and behaves
  • Layer like a legend: Add one tortilla, spread a layer of turkey mixture, then sprinkle cheese evenly edge to edge
  • Repeat the layers: Add another tortilla, more turkey, and more cheese, keeping everything even and packed with flavor
  • Finish strong: Add final tortilla, a thin layer of remaining turkey, and top with the rest of your cheese
  • Bake to perfection: Bake uncovered until the cheese is melted, bubbly, and lightly golden on top
